The Best Chocolate Cake Ever!!

Last week we celebrated a very special day for an amazing woman. Marc's mother Mrs. Ruth Coleman celebrated her 90th birthday. That's right 9-0!! Having known that her favorite cake flavor is chocolate, we went overboard and captured the essence of her wish in this Triple Chocolate Brownie Masterpiece of a Cake. Happy Birthday Mom!

90th Birthday Celebration
Quick Tip: You want to cook this the night before and frost it the next day.
This is the easiest most delicious cake you can bake, it looks intimidating but I promise its simple.

Ingredients:

One Box of Chocolate Cake Mix (I used the Betty Crocker Cake Mix)
One Box of Ghirardelli Brownie Mix
Ingredients on boxes above (eggs, oil, water)
2 Tubs of Chocolate Fudge Frosting (Betty Crocker comes to the rescue)
1-1/2 Cups of Chocolate Chips

Bake your cakes per instructions on the box in 8" or 9" round cake pans, don't forget to butter the pans for easy removal after they cool.

Bake your brownie mix in the same size pan you used for your cakes. I let all of them cool overnight, but removed them from the pans 10 minutes after taking them out of the oven.

The next morning I frosted, start with your first layer of cake and generously spread the chocolate fudge frosting over the top of first layer.

Next, place the brownie on top and frost again with a layer of frosting.

Lastly, place the other cake round on top of the brownie for the third and final layer.

Add a special flair to the top by taking your butter knife and pulling up and towards reversing directions in rows for a wave effect.

Once you  have finished frosting the top and sides of the cake you can press chocolate chips onto the side of the cake.

What are you waiting for? Wipe the drool and forget about the calorie count for a minute, we all deserve to indulge every once in awhile!!

I believe the ultimate secret to this cake recipe is my handy dandy Kitchen Aide Mixer. If you don't have one and you love to bake and cook then its a must!
